Jackie is planning on opening her own healthy food restaurant in the San Antonio area, hoping to cater to families with children.  She wants to demonstrate that there are healthy and enjoyable lunch and dinner options that the family can enjoy. She has decided to name the restaurant “Pickey Eaters”.

Jackie has also just recently begun taking classes towards an MBA, and is planning on using her MBA curriculum to give her a better understanding of how to make her business successful. She is still in the early planning stages of her venture, and is setting up her pricing models and supply chain connections.

Jackie writes that she is looking for the perfect spot for her restaurant, and her projected start date to open is the spring of 2012!
